Ingredients


Makes: 4 servings
  • 2 ripe avocados, mashed (reserve avocado shells)
  • 1/2 C (125 ml) light sour cream
  • 1 Tbsp (15 ml) lemon juice
  • 3 Tbsp (45 ml) Guacamole Dip Mix
  • 1 C (250 ml) salad shrimp, reserve a few for garnish
  • 2 tsp (10 ml) chives

Preparation


 
  • Combine avocado, sour cream, lemon juice and dip Mix. Refrigerate 1 hour to allow flavours to mellow.
  • Fold shrimp into prepared guacamole.
  • Scoop filling into reserved avocado shells. Garnish with reserved shrimp and a sprinkle of chives.

Tip: Substitute Guacamole Dip Mix with Poco Picante Salsa Mix.
